The one thing that instantly makes me fall in love with a recipe is versatility. If you can improvise with the fillings, toppings or spices without screwing up the proportions or the functionality of the recipe, I’m sold. In my book, the queen of versatile savory treats is the focaccia. After making the basic dough, you can throw on whatever makes your mouth water (or whatever you happen to have in the fridge) and the result is always so delicious and rewarding. Focaccia is also a nifty way of getting rid of any leftovers or using up the last bits of whatever you have in jars in the fridge.

The fresh herbs incorporated in the dough in this recipe really give the focaccia some depth to its flavor. Thyme is my favorite, but you can always try fresh oregano or the more traditional rosemary. The fresh mozzarella adds some wonderful flavor and texture as well.

Being a Gemini who cannot make up her mind, I made two versions with different toppings, so there are two topping options in the recipe. The tomato topping is very moist and juicy, so don’t overdo it with the cherry tomatoes or you could end up with a soggy focaccia, which is very sad to look at and even sadder to eat. Trust me – been there, done that. The tomatoes also add a surprisingly sweet note to the flavor palette, so sprinkling some Maldon salt flakes on top of everything gives the tomatoes some balance. The tuna topping has a bit more meat on its bones and is a very filling and satisfying variation and easily doubles as lunch.

There are as many ways of making focaccia dough as there are bakers out there, and some recipes call for quite hefty amounts of oil. This is just a matter of preference, and I prefer my focaccia not bathed in oil. This easy focaccia recipe uses just 2 tablespoons of olive oil and I find that no more is actually needed to achieve truly high levels of yum.

Easy Focaccia Recipe with Herbs & Mozzarella

Ingredients

FOR THE DOUGH:
– 1 cup warm water
– 1 (1/4 ounce) envelope active dry yeast
– 2 3/4 cups all-purpose flour
– 1 teaspoon salt
– 1 teaspoon sugar
– 3 teaspoons fresh thyme
– 1 teaspoon dried basil
– ¼ teaspoon ground black pepper
– 2 tablespoons olive oil + extra for brushing

FOR THE TOMATO TOPPING:
– 1 cup fresh mozzarella cheese (shredded)
– Handful of cherry tomatoes
– 2 tablespoons of capers
– Sea salt flakes

FOR THE TUNA TOPPING:
– 1 cup fresh mozzarella cheese (shredded)
– 1 can of tuna in water
– 2 tablespoons of chopped sundried tomatoes in oil
– 2 tablespoons of green pesto
