This baked Scandinavian sheet pancake has a truly wonderful, sweet flavor that owes its deliciousness to ground cardamom and vanilla pod seeds. You can use vanilla extract as well, but I love seeing the tiny black dots on the finished pancake and the taste is just unbeatable. If you are not a cardamom superfan like myself, you can halve the amount used here and still get that sultry flavor. I just love the way it makes my home smell!

Sheet pancake is such an easy dessert to make –  just melt the butter, combine all dry ingredients and add the wet ones, and the batter is ready to go to the oven. And it smells so amazing! The sheet pancake is a somewhat denser, richer version of regular, pan-fried pancakes (that are much fluffier), so you shouldn’t expect a similar texture.

Just cut the finished pancake into squares and top with your favorite jam or marmalade. Strawberry is the classic choice but I actually prefer raspberry, as it prevents sweetness overload. If you really want to indulge, some whipped cream would make this dessert absolutely insane.

Scandinavian Sheet Pancake

INGREDIENTS

1 1/3 cup all-purpose flour
1/2 cup sugar
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground cardamom
1 vanilla pod or 1/2 teaspoon vanilla extract
3 1/3 cup milk, preferably full-fat
2 eggs
3/4 stick butter

INSTRUCTIONS

  1. Melt the butter and let cool. Line a baking sheet with raised edges with parchment paper and set the oven to 425 F.
  2. In a large bowl, combine flour, sugar, baking powder, salt and cardamom. Mix with a fork to thoroughly combine.
  3. Add milk and eggs and whisk only to combine. Add the lukewarm (not hot!) melted butter and whisk as little as possible to combine until you have an even texture.
  4. Pour batter on the baking sheet carefully as the sheet will be filled up. Carefully put the sheet in oven and bake for 25-30 minutes, or until the surface is golden brown. Let cool until warm, not hot and cut into squares and serve with the jam of your choice.
