This is the kind of recipe I love the most: simple, no-fuss ingredients that are readily available everywhere, quick to make and tastes ridiculously awesome. Not to mention that you can easily customize this jalapeno cheese muffins recipe to you heart’s content.
You can use different chilies, bell peppers, mushrooms or whatever you have available. Or you can do what I did, which was to combine the mellow spiciness of jalapeno peppers with the creamy cheesy goodness of mozzarella. Sooo good.
I used fresh mozzarella pieces torn from a ball on top of the muffins, because I think fresh mozzarella melts more easily and beautifully than the shredded variety, but if you only have the shredded kind, you can use it to top these savory muffins without any problems.
I also loved the red pops of color that come from using red jalapenos instead of the more traditional green ones, which work just fine with this recipe as well. Just go with whichever you like more.

Jalapeno Cheese Muffins
3/4 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon dried parsley
1/2 teaspoon dried basil
1/2 teaspoon garlic powder
1 cup shredded mozzarella
1/3 cup canned red jalapeno pepper slices
3/4 cup milk
1/3 cup fresh mozzarella pieces
- Set the oven to 375 F. Grease a 12-slotted muffin tin with butter, making sure the butter evenly coats each slot.
- In a medium bowl, combine flour, baking powder, salt, parsley, basil, garlic powder and shredded mozzarella.
- Chop the jalapeno slices to the size of your liking. Add them to the bowl along with milk and egg. Mix with a fork only until all ingredients have been evenly incorporated. Don’t over-mix.
- Spoon the batter into the tin. Sprinkle each muffin with pieces of fresh mozzarella. Bake on the lower rack for aboout 20 minutes, or until the tops are light golden brown.
